Noble Sandwich Co. expands at Oasis

When asked how he described his partnership with Oasis Texas Brewing Co. and his third Noble Sandwich Co. location in Four Points, owner Johnny Bates, described it as, “A dream partnership; a marriage made in heaven.”

“The reason we chose this location was because we wanted to experience a new audience and expand into other areas outside of 620 and Burnet Rd,” Bates said.

He and his team opened Noble Sandwich’s newest location on Labor Day weekend on the third floor of the Oasis complex.

Bates describes the Noble Sandwich as an “all scratch restaurant” that “makes everything at home and is dedicated to scratch cooking,”

He launched Noble Sandwich with Brandon Martinez in September 2010. The two met at Del Mar College culinary school in their native Corpus Christi. After graduating in 2000, Bates was involved with two well-known Austin restaurants, as executive chef at Asti, and as a sous chef at Wink. He said a variety of restaurants helped him to refine his culinary skills and define his approach.

Bates said that having his restaurant partnered with a brewery was a dream he had long before he received the call from Oasis Texas Brewing.

“I have a lot of friends and connections in various Austin breweries but then one day we got a call from Oasis Texas Brewing asking if we wanted to lease their kitchen and provide food to go along with their beer and it was an opportunity we gladly took,” Bates said.

Having a brewery right next to your kitchen has given Bates the chance to experiment and provide new menu items exclusive to this third location.

“One of the things we do is take the spent grains from the brewery and create a beer cheese and ‘Brewer’s bread’ which we offer as appetizers here,” he said.

As for the restaurant’s main menu items, their sandwiches, Bates says that their classic “noble pig sandwich” has remained a favorite among his other locations and is becoming a favorite at the new Oasis location.

“You can’t go wrong with a classic. (It) offers pork cooked three different ways —​  bacon, ham, and pulled pork. It is served on white or wheat bread and contains our ‘noble sauce’ which is made with mayonnaise and spicy mustard,” he said.

Noble Sandwich is open Thursday and Friday 5-9 p.m. and Saturday and Sunday 2-10 p.m.

“Part of being partners with a brewery meant having to stay open late, people like drinking later in the day,” Bates said.

He hopes to encounter the success he’s had with his two other Noble Sandwich locations at this new location.
